Scamorza is a pear-shaped cheese that is made by tying a fresh mozzarella ball about 1/3 of the way from the top and hanging it to dry. After drying, the cheese is then either packaged immediately or naturally smoked over cherrywood chips. Scamorza can be used in the same dishes as fresh mozzarella, but since it is dried it is slightly firmer, shreds exceptionally well, and can even be grilled or fried.
