Made exactly as they do in Puglia, Maplebrook Farm’s burrata replicates old-world fashion by stretching curd into mozzarella and filling it with a luscious creamy center. The soft center, stracciatella, comprised of cream and strands of mozzarella gives this cheese a distinct flavor. Cut in half and served in a deep plate, paired with fresh tomatoes, fragrant basil, or peaches and rosemary. Scooped with crusty bread and accompanied by a bottle of wine. Substitute mozzarella with burrata in Caprese salad to flare up a traditional dish. Burrata acts as a canvas for culinary creativity. Available in three sizes: 2oz, 4oz, and 8oz
Recipe Suggestions: Caprese salad, peaches, grilled asparagus, honey, and strawberries
Pairing Suggestions: Prosecco, Pinot Grigio, wheat beers
Stracciatella, also known as the "goodness inside Burrata" is made by soaking hand-pulled strands of mozzarella in cream overnight. A unique substitution for traditional Mozzarella, Stracciatella is the perfect addition to any summer cheese platter.

Our 8oz handmade fresh mozzarella balls and 4lb loaves are smoked minutes after they are made for optimum freshness and flavor. This is a naturally smoked product, with no liquid smoke or coloring added. Our custom smoker smolders dampened cherry wood chips, producing smoke that circulates through a low speed fan. This creates a delicate smoke flavor with a desirably thin skin. The cheese rests on racks in the smoker for no more than 2 ½ hours before it is cooled and then hand wrapped.

Scamorza is a pear-shaped cheese that is made by tying a fresh mozzarella ball about 1/3 of the way from the top and hanging it to dry. After drying, the cheese is then either packaged immediately or naturally smoked over cherrywood chips. Scamorza can be used in the same dishes as fresh mozzarella, but since it is dried it is slightly firmer, shreds exceptionally well, and can even be grilled or fried.
